What you need:
- 18 bread slices, crusts removed
- 1 egg yolk
- 1 cup cream cheese
- 1 cup white sugar, divided
- 3/4 cup butter, melted
- 3 tablespoons ground cinnamon
Beat together egg yolk, cream cheese and 1/4 cup sugar in a medium bowl. In a separate bowl, combine cinnamon and remaining sugar. Spread the cream cheese mixture on each bread slice then roll the jelly roll way. Coat each roll with cinnamon mixture then arrange all rolls in a baking sheet. Cover and refrigerate until frozen, about 1-2 hours. When ready, bake in a pre-heated oven (350 degrees) for 20-25 minutes or until golden brown.
Cinnamon Milk Heaven
What you need:
- 1 cup milk
- 1 teaspoon honey
- 1 pinch ground cinnamon
- 2 drops vanilla extract
Heat milk in a pan over high heat until begins to foam. Pour warm milk in a mug and stir in honey and vanilla. Sprinkle with cinnamon. Add mini marshmallows and a stick of cinnamon if desired.
Classic Cinnamon Pie
What you need:
- 10-inch unbaked pie crust
- 1 egg, beaten
- 1 1/2 cups milk
- 1 cup white sugar
- 2 tablespoons butter, melted
- 1 1/2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 pinch salt
Mix together sugar, all-purpose flour, cinnamon and salt followed by egg, butter and vanilla. Combine ingredients well then stir in milk. Pour the mixture onto pie crust then bake on a pre-heated oven (400 degrees) for 45 minutes to an hour until cooked through. Allow to cool before serving.
Cinnamon-Flavored Popcorn
What you need:
- 8 cups freshly-cooked popcorn
- 1 1/2 cups cinnamon candies
- 1 cup butter
- 1/2 cup light corn syrup
Place popcorn in a large heat-proof bowl. Set aside. In a small saucepan, combine cinnamon candies, butter and corn syrup and bring to a boil. Pour the cinnamon mixture over bowl of popcorn and coat evenly. Spread popcorn on a baking sheet and bake in a pre-heated oven (250 degrees) for 25-30 minutes or until coating is set.

What you need:
- 2 egg yolks
- 2 egg whites
- 1 cup all-purpose flour
- 1 cup buttermilk
- 1/4 cup butter, melted
- 1/2 tablespoon white sugar
- 1 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 pinch ground cinnamon
In a medium bowl, combine egg yolks, buttermilk, butter and vanilla. In a separate bowl, mix together flour, baking powder, baking soda, sugar, salt and cinnamon. On a third bowl, use an electric mixer to whip egg whites until stiff. Mix all 3 bowls to create the batter. Pour the batter on a hot waffle iron and cook until golden brown.
